The Great Pumpkin!

I've got TWO pumpkin recipes to share tonight! I absolutely love pumpkin, and will probably be making these two quite often. Feel free to ship me any extra canned pumpkin ;) I'm stocking up while I can find it. I think the smell of pumpkin is one of the reasons I love fall so much. It's just.. homey.

One is a Hungry Girl recipe and the other from my TOH cookbook. I'm taking the cupcakes to work tomorrow, if they survive the night with husband and kid- apparently they haven't realized it's a diet recipe. Heh.

Caramel Pumpkin Pudding Cupcakes


Ingredients

For Cupcakes:
2 cups moist-style yellow cake mix (I use sugar free)
1 cup canned pumpkin
1/3 cup water
1/2 cup fat-free liquid egg substitute
2 tbsp sugar-free maple syrup
2 tsp cinnamon
2 tsp Splenda
1/8 tsp salt

For Topping:
3 cubes chewy caramel (about 1 oz)
2 tsp light vanilla soy milk (I used skim instead)

Directions:

Preheat the oven to 350.

Combine all cupcake ingredients in a mixing bowl. Whip with a whisk or fork for 2 minutes until well blended. Spray muffin pan or line with baking cups. Spoon batter evenly into muffin cups. Bake for 10-12 minutes. Cupcakes will puff up but still appear a little gooey on top. Centers will also be gooey (thus the pudding cupcake thing).

While cupcakes cool, place caramel and milk in microwaveable dish. Milk will bubble up, so make sure the bowl is large enough. Microwave at medium power for 1-1/2 minutes. Stir vigorously until smooth. Immediately drizzle over cupcakes.

Makes 12 servings at 108 calories each or 3 points plus.

Pumpkin Mousse

Ingredients

1-1/2 cups cold fat-free milk
1 pkg sugar-free instant butterscotch pudding mix
1/2 cup canned pumpkin
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp allspice
1 cup fat-free whipped topping

Directions

In a large bowl, whisk milk and pudding mix  for 2 minutes. Let stand for 2 minutes or until soft-set. Combine the pumpkin, cinnamon, ginger, and allspice; fold into pudding. Fold in 1/2 cup whipped topping.

Transfer to  individual serving dishes. Refrigerate until serving.  Garnish with remaining whipped topping.

Makes 4 servings at 96 calories or 2 points plus.

Hello, hormones. And canned pumpkin.

I'm going to vent a moment. I've been cranky the last 24 hours, and I think it's a combination of hormones (tom is visiting soon I think), lack of sleep, and people being stupid.

This is week 2 for our BL contest at work, and I'm sort of regretting it already. It's the third time we've done this, and the first round was great. Second round was not. People were skipping weigh-ins since they knew they were going to gain (and pay in to the pot). Some just happened to be absent from work on Friday, but a few just flat out said they weren't weighing because they didn't want to weigh-in. Eventually, most of us dropped out (myself included) because it just wasn't fun like that. When boss friend asked if we could do a third round, I wasn't sure I wanted to. A bunch of coworkers were excited about it though, so we did. AFTER adding some new rules in. Apparently, I was not the only one a little frustrated over how the last round went. One rule that a few people demanded: No skipping weigh-ins! If you skip one, you're out of the game. If you're sick, you have to weigh-in the first day you're back. Period.

Technically, no one is asking to skip a weigh-in yet, but I'm still frustrated. We have a coworker leaving the company and Thursday is her last day. We talked about having a little thing for her and all bringing snacks. Great idea, I like her. I plan to bring my low-cal pumpkin caramel cupcakes (I think they're 3-4 points on new ww). And then someone asked if we could move the weigh-in to Thursday. The same someone that was so adamant about having all these new rules. My vote to just bring healthier snacks was in the minority.   The majority was in favor of weighing Thursday so they can eat junk later.

I'll still be weighing in Friday morning.

I don't think it's changing the rules that's actually bothering me. It's the fact that everyone was so excited about a new round, and then half gained during the first week. Now we're in the second week, and they're rearranging the weigh-in so they can eat shit and not face the scale the next day. At least half of the people participating are making no effort at all. THAT is what's really bothering me. Actually keeping up with the contest takes very little time on my part, but a few of us are trying really hard and taking this seriously. As we ALL should.

Moving on..

This week has been great, and easy actually. Monday was a rest day, and today was another date with Jillian. I've got my weights and ball out to use while I watch BL tonight. I'm already getting a little sore from earlier, but that just reassures me I didn't waste my time! I definitely don't "phone it in" with 30 Day Shred!

Ooooo! I found canned pumpkin at the grocery store this weekend! FINALLY. I made pumpkin mousse last night, and I forgot how awesome it was. It's pumpkin pie in pudding form. And only 2 points. Epic.

Hamburger Noodle Casserole

We tried a new recipe from one of my favorite cookbooks tonight, and it's definitely a new favorite! It does NOT taste like something you should be eating on a diet, so the boys loved it as well. The only thing I'd do differently next time is double the green onions. Kiddo gave it 4 stars :)


Hamburger Noodle Casserole (from Taste of Home)

Ingredients:
5 cups uncooked yolk-free noodles
1-1/4 pounds lean ground beef
2 garlic cloves, minced
3 cans (8 oz each) tomato sauce
1/2 tsp sugar
1/2 tsp salt
1/8 tsp pepper
1 package (8 oz) reduced-fat cream cheese
1 cup reduced-fat ricotta cheese
1/4 cup fat-free sour cream
3 green onions, thinly sliced
2/3 cups shredded reduced-fat cheddar cheese

Directions:
1. Cook noodles according to package directions. Meanwhile, in a large nonstick skillet over medium heat, cook beef and garlic until meat is no longer pink; drain. Stir in tomato sauce, sugar, salt, and pepper; heat through. Drain noodles; stir into beed mixture.

2. In a small mixing bowl, beat cream cheese, ricotta cheese, and sour cream until blended. Stir in half of the onions. 

3. Spoon half of noodle mixture into a 13x9 inch baking dish coated with cooking spray. Top with cheese mixture, then remaining noodle mixture.

4. Cover and backe at 350 for 30 minutes. Uncover; sprinkle with cheddar cheese. Bake 5 minutes longer or until cheese is melted. Sprinkle with remaining onions and serve.

Makes 10 servings. 

1 cup is 290 calories or 7 points plus on weight watchers.

Girls Night Out!

So girl's night out.. We did make it to the gym after pizza last night (I had a huge salad and 4 pieces of pizza- 4 sounds like a lot, but they're the size of those Tostino's pizzas). The gym almost didn't happen, for bff anyway, because she tried everything in the world to get out of it. I'm still not sure why she signed up ;) I felt good about our girl's night out because we still had a blast, but I didn't ruin all my hard work from the week. We spent an hour at the gym, and omg, I hurt so bad I had trouble sleeping. I don't sleep well as it is some nights because I'm uber restless, but dear baby Jesus, every time I moved it woke me up. That's a bunch of bull!

Memphis weather was awesome today, so we had a picnic at the park and planned a walk. Unfortunately, our local weather man was wrong about the no rain thing, and it started raining about 5 minutes after we finished eating. Guess no walk!

Obviously, today turned into a rest day. My legs needed it. I still want to do the 30 Day Shred for the entire 30 days, but I'm settling for every other day for a week first.

My kiddo is with his dad this weekend, and Mr. D worked all weekend long, so I pretty much hung out with bff and her family all day. Her husband (Mr. D's bff) made me salmon! I mentioned wanting to try making it, so we all loaded up and headed to the store to get some. He kept it simple, and pan-fried it (he suggested grilling instead but his tank was empty) in a tsp of olive oil with carribean jerk seasoning. I actually liked it :))

Tomorrow.. please pray for my diet. Taking the kiddo to a birthday at Incredible Pizza. For those not familiar with it, it's like Chuck E Cheese for big kids with a buffet of everything kids love- pizza, tacos, pastas and junk in general. I think there's a salad bar, but that's the only healthy option.

Honestly, most of that doesn't even sound good. Workout is planned early in the morning, the pain in my legs should be an amazing reminder not to eat junk!

Weigh in

First BL weigh in at work, and it was crazy! Half gained, half lost. I'm happy to report that I was in the half that lost (1 lb). Even with that small loss, I'm still tied for first right now. Hopefully there's a boost in morale soon!

My legs didn't feel too bad when I got up this morning.. until I had to go downstairs. Ouch! They've gotten worse as the day progressed, but nothing unbearable. Just a little zombie shuffling.

I'm meeting the BFF for dinner tonight, and she wants pizza. Oy vey. Salad and veggie pizza is my plan, but I've got 17 daily points and 42 weekly points left to work with, should something else catch my eye. I did cheat nights in the beginning, and ate whatever I wanted. I was a dumbass. Nothing wrong with splurging a little, but it will be within my points. Period.

My stipulation to pizza for dinner was hitting the gym together afterwards, so that's the plan. Knowing I'll be sweating soon after should help keep me in check! Maybe the elliptical will help loosen my legs up!

Day 1

So I'll make this quick, because my arms ACHE.

HOW IN THE WORLD DID JILLIAN HURT ME THAT MUCH THAT FAST?!?

I'm just sayin' guys.. 45 minutes of weights at the gym, and I don't wimp out there, but I never get sore until AT LEAST a few hours later!

Jillian's like a platypus.. small, and cute, but full of poison that will KILL your buns and thighs!

Someone that's actually made it through all 30 days, does it get easier?

It's not what it looks like..

Didn't post a weigh-in yet this week, and it's not because I was bad or anything. I wasn't perfect, there was sushi and frozen yogurt on date night this past weekend, and a few bites of Mr. D's soup, but I stayed within my points all weekend, and all week so far. Exercise has not been wonderful, thanks to a sore knee and shoulder after Zumba on Tuesday. I took Wednesday off, and planning to try a dvd at home tonight. Neither has bothered me too much today, but I'm not going to push if it starts to hurt in the middle of it.

Our office started another round of Biggest Loser (not my doing- honest), and weigh-ins for that are Friday mornings. I hate the idea of weighing twice, so I'm just going to post my losses from that instead. So I'll have that tomorrow :)  Two people weighed in early today, and both had to pay in. A few others mentioned they're expecting the same, and didn't sound too worried about it. I'm not saying worrying is a good thing, but I've never seen the group be so whatever about gaining this early in the competition. It's the first weigh-in, guys! Doesn't exactly bode well for the next 11 weigh-ins, especially since they'll be happening during the holidays.

Biggest Loser started up this week, and it looks like it might be more interesting than the last few seasons. I love the show, but haven't really followed it as closely the past few seasons. Partially because I have ADD, and watching a 2 hour show every week is just asking too much. We did watch the weigh-ins, though. Is anyone else watching this season?

In other news, I'm cooking salmon tomorrow night. Mostly because I have it in the freezer and neither of the boys will be home to complain about it. I am not a fish person, unless it's fried. I found 2 tilapia recipes that weren't bad, but that's the best I can say. I'm stubborn though, and determined to find fish recipes I can enjoy simply for the health benefits. So any awesome fish recipes you have (doesn't have to be salmon- just whatever), lay it on me :))

**I've been commenting this week on blogs via a new app on my phone, and JUST saw that they aren't showing up apparently. I'm not being an ass, honest, just faulty technology :(

A slow suicide?

First things first, weigh-in. I lost .8 lbs this week. That't ridiculous, but I'm not going to allow myself to get frustrated over it. I know what happens to my losses when I start to stress. Maybe it's the weights (doubtful), but my money is on my water intake. I slacked off this week unintentionally. Fixing that immediately.

BFF's husband and I met at the gym this morning, and I'm already a little sore! Apparently, we're better matched as gym buddies than bff and I. We both hit the elliptical hard for half an hour, then weights for 45 minutes, and finished with another 25 minutes on the bike. I definitely pushed harder on the elliptical today, but there was no way I was going to match his speed. Trying to keep up did kick the intensity up a notch, though. Win.

I went straight to the grocery store afterwards, sweaty and all, because I could go alone. Is it just me, or does anyone else come home with more junk if the spouse or kids tag along? There are chips and a few snacky things in there for the kid's lunches, but that's it. It's just easier without the temptation in the house. I did grab some of that Philadelphia cooking creme to try this week. I get the Kraft healthy recipes in my email almost daily, and wanted to try a few with the cremes. I already calculated the points for the new recipes, and it'll fit into my plan.

Now, I need to vent a bit. I have a coworker with diabetes. I know she's supposed to be on 3 different medicines to control it. I also know she's definitely non-compliant. She has a band or bypass (not sure which honestly), and probably would just be in the overweight category now, but every day.. Whatever dessert we have catered at work- she's all over it. Most of us don't even say a word about it anymore, but this week was different. Thursday, I looked across the hall, and she was asleep at her desk right after arriving. I asked what was going on, and she said she was just so tired. She'd fallen asleep at a stop light on the way to work, and had run over some curbs, and just couldn't stay awake. Another coworker with mild diabetes sent her to the nurse to get her sugar checked. It was super high, they added 2-3 more prescriptions. Guess what dumbass had at lunch?! Strawberry cake. Seriously? We all yelled at her, she said she would do better the next day. She came in Friday just as bad off, and actually came back from the lunch room with 2 cookies.

I normally don't interfere with this stuff because, honestly, I don't feel like I have a leg to stand on.. I went to her desk anyway and asked if she was trying to kill herself. Eating that crap when her diabetes is already so out of control is like a slow suicide in my opinion. I pointed out that we BOTH have our own issues (my weight, her diabetes) and neither of us needed the damn cookie. I understand people screw up sometimes (God knows I do), but to be so dismissive about such a huge problem? It makes me want to try harder. She ended up giving me the cookies, and I brought them home to kid and Mr. D. Like I said, I didn't need them either. And they're still in the kitchen I think.

Anywho. Some of the folks at work are talking about starting another round of Biggest Loser. Not sure whether I'll be joining or not, but I think it's a good idea given the junk that's brought into our office on a regular basis. It's easier to turn it down when you're not the only one.

Thursday and Friday

As usual, I'm behind! I've stayed away from the scale all week, no peeking to make sure I didn't get discouraged when I didn't see the numbers I wanted. I did look this morning though, and it's going to be a super small loss for the week I think. I'm okay with that, since it's in the right direction. No getting frustrated when I know I did my best.

Thursday, breakfast was cheerios with skim milk and strawberries. And of course, coffee with cinnamon dolce creamer. Not my favorite creamer, honestly.
Snack was grapes and cheese. Fruit and cheese is one of my favorite snacks :))
Lunch at work was salad with spritzer, green beans, and poppyseed chicken. I had to guess on the chicken, but found a recipe online that looked close and used those stats to calculate it.
Dinner was tuna on a sandwich thin with lettuce, tomato, and pepperjack cheese. I wasn't too hungry at dinner, so that was perfect.
Mr. D had to work Thursday night, so I didn't get to head to the gym. I did pull out my Biggest Loser Kinect game, though. Has anyone else used this?? I like it more than My Shape for Kinect, but just barely. I think there's more variety, but my sensor seems to have trouble picking up some of what I do on the floor. I've moved the sensor and hasn't helped much. Half an hour with that game and I was sweatacular.

I had a glass of low fat chocolate milk afterwards since I did plenty of squats and lunges. I don't mind being a little sore, but squats and lunges kill me. I shuffle like a zombie the next day LOL! The chocolate milk really does seem to help with that though. Of course, it could all be in my head, but whatever as long as I can walk!
Friday, breakfast was a low fat waffle with strawberries topped with light whip cream, coffee with peppermint mocha creamer, and a green monster made with spinach, mixed frozen berries, skim milk, and a banana.
Snack was cantaloupe, one of my favorite fruits honestly. I wait to cut the melon up until it's almost too ripe, that's when it's sweetest :))
Lunch was a grilled chicken sandwich and baked potato from Danver's. I added a little sour cream to the potato and found some light butter in the fridge at work.
Afternoon snack was cantaloupe again :))

Dinner was an accident. Friday night is Mimi night for my son, so we headed to her house. She'd called and asked to borrow my car to go run errands before dinner (my dad's truck needs new tires so he's using hers until he has time to go get that done). That was fine, since my only plan for the night was heading to the gym. My mom's bad about time when she runs errands, so I took my gym bag with me and planned to hop on her treadmill while waiting for her to get back. Except, she never left. By the time she finally decided she wasn't going to go, it was almost 7 and I was starving. So, I had dinner there. She made lasagna, and I had a small piece and made myself some broccoli to go with it. I have no clue how many points it was, so I used Stouffer's to track.

I did head to the gym afterwards, but not until 10pm. I'd been up since 5am, so I was dragging and still a bit sore from squats and lunges. I managed to get in about 50 minutes on the elliptical, and I'm happy with that. I ignored the weights, and I'm okay with that too.

Today is going to be busy, but I'm prepared and will stay on track if it kills me. I haven't gone over points all week long, and I sure as hell will not be blowing it the day before weigh in! Hope everyone else has a beautiful Saturday! The weather has been amazing here this week :))

Gym Buddies

So far, so good this week! No temptations really, other than wanting to eat from frustration occasionally. Zumba was cancelled tonight because our instructor was sick, so bff and I went to the gym together instead of taking the night off since things didn't go according to plan. I'm working on being more flexible when things don't work out.

Monday started with coffee and cinnamon dolce creamer.

I got up and made Mr. D and my brother breakfast before they left for work, but waited to eat until kid got up so we could have breakfast together. We don't get to eat together most of the time during the week, so we took advantage of Labor Day. I had a poached egg on toast with clementines and half a glass of skim milk.


Lunch was a bbq chicken (deli meat) sandwich with lettuce, tomato, banana peppers, and light cheese. I added carrots with ranch spritzer.


Dinner was baked skinless bbq chicken with mixed veggies. It wasn't ribs and potato salad, but it was good enough for me.


Tuesday, breakfast was a bagel thin with strawberry cream cheese, coffee with peppermint mocha creamer, and a green monster smoothie made with skim milk, spinach, strawberries, and banana.


I had a morning snack of grapes and a light cheese stick.


Lunch was a salad with grilled chicken and ranch dressing, and potato salad. I used regular ranch because my spritzer got left behind in my fridge at home :(


Dinner was sausage spaghetti pie, though it wasn't very pie-ish because I forgot to mix the egg whites in with the noodles. Apparently, the egg whites are the difference between noodley and crusty. It was still delish, just not very pretty! And before you freak over the name, it's from the Taste of Home diet cookbook.


Post workout, I had a small glass of chocolate milk. I still don't know if it actually does anything, but I'm not going to risk being sore in the morning just to test the theory ;)

Three day weekend, and weigh-in!

Because this is my favorite part, I'll just go ahead and tell you I lost 2.4 lbs this week. After having Chinese the night before. No regrets this week :D

My knee chilled out enough to go back to the gym and abuse it some more. So I did. The bff went with me after signing up for a membership this week. Her husband got one, so mine did, then she did. I was admittedly a little shocked that she signed up, even though she goes to Zumba. I've always had this feeling that she enjoys getting out of the house on Tuesday nights more than the class.. mostly because she shakes her head at the instructor on a lot of the moves! Either way, I really loved that she went with me. She also had me stay almost an hour after Zumba earlier this week to talk about weight watchers because she wants to lose weight. I did, and as of Saturday night, she still hasn't started. Both our husbands have said she won't do it, but as a fellow fatty, I can't agree with them. Everyone's final straw is different.

I still don't know why it finally clicked for me (or why it clicked OFF this summer), and I don't know if or when it will click for her. But I do know that a lot of people told me I would quit after 2 weeks of dieting last year. I made it a year before finally going off course, and got back on eventually. It would be very unfair to say she can't or won't do it. I hope she proves the guys wrong. And rubs their faces in it :)

Anywho, I worked out with her Friday night and Mr. D this morning. I used the weights a lot more both trips to the gym, and am getting a bit more comfortable with them. I still feel a little anxious using them when there are a ton of people there, but I'll eventually get over it. My friend also suggested drinking low fat chocolate milk afterwards to keep my muscles from being so sore. I think it's helped, because I'm not nearly as sore as I was last week and I did a lot more this weekend. So, there- a reason to keep chocolate milk in the fridge. You're welcome.

On another note, my mom donated some clothes to me this weekend. She had a bag of clothes from when she lost almost 100 lbs after my son was born. She was down to a size 12/14, but gained over half back since then. Most of the shirts are 16s and 18s (not women's). There's one that fits comfortable, but the rest make me feel like a stuffed sausage. One I really love is a long sleeved shirt, and I want to wear it by my birthday comfortably. It's really tight in my arms, and it's going to take a lot of work!

Thursday breakfast was a bagel thin with low fat strawberry cream cheese, watermelon, and coffee with almond joy creamer.


Lunch was salad with spritzer, and they brought 2 kinds of pasta. I tried both, but only liked the alfredo.

Afternoon snack was watermelon with string cheese.


Dinner was fish (which was disgusting and went in the garbage), steamed broccoli with cheese, and a baked potato with ff sour cream and light butter.

Friday, breakfast was a poached egg with toast, watermelon, and coffee with creme brulee creamer.

Morning snack was yogurt.

We didn't have lunch catered Friday, so I used one of those hormel meals- spinach and cheese ravioli? Don't buy it. It wasn't disgusting, but it wasn't worth it either.

Afternoon snack was an apple.

Then coffee with peppermint mocha creamer. I was starving all afternoon, and so tired, so the coffee helped take the edge off both :)


Kid spent the night with his dad Friday, but we met at my mom's house. And what did she have ready for us when we arrived? Chocolate covered sin. Cleverly disguised with brightly covered candles. She made them from scratch, and sorta bullied me into trying them to give her an honest opinion. I had one bite, and told her what I thought. As soon as his dad got there, I boxed them up and sent them with him. Better to add dimples to their asses than mine.

BFF and I had dinner at the mall and went shopping. I splurged and had Chinese, and it was awesome. We walked the mall for 2 hours and then headed to the gym, so I don't feel the least bit guilty.


I found my new favorite hat, too.

A good day, and extra food porn.

Good news: I had my annual physical Wednesday, and rocked it after scaring myself and the new nurse. The first time new nurse (that is NOT Dana, my favorite nurse that doesn't work there anymore) took my blood pressure, it was 158/90 something. That's high. So Dr. H had them run an ekg, which was normal. Then I got to lay and chill for half an hour before they took it again. It was perfect the second time, so I suspect new nurse sucks. Because she's NOT Dana. Dr. H is serious about me getting weight off, she doesn't tip-toe around it like some docs, but I think I would have gotten a gold star on my lab sheet if she had any. They were perfect, even for healthy folks. I'm not even anemic anymore (which is probably the prenatals, but dude, don't be a buzz kill). She also cleared me to get knocked up, and made me promise to keep working at the weight loss so my labs stay perfect.

Also, she gave me a copy so I can rub my awesome labs in Mr. D's face since his good cholesterol is too low, and bad is too high. So I'm right- stop picking up McDonald's, husband.

MORE good news: I found a weight watchers app on my new phone that I love, so I've been using that the last few days. I went back and added everything else from earlier this week, too. I used 4 weekly points on Sunday, and was under my points every other day. WINNING.

Tuesday's grub:

Breakfast was coffee with almond joy creamer, raisins and spice oatmeal, and a fruit salad (1/2 a banana, 1/2 cup strawberries, and a clementine).


Lunch was a Lenny's turkey sandwich with mustard, no cheese. I've seen people order veggie subs before, and thought that was just silly. I get it now. My sandwich had more veggies than meat, and I honestly wouldn't have missed the turkey.


Afternoon snack (I never get hungry until right before it's time to start cooking dinner!) was a pear. Got the kid to try it since he loves apples. Apparently, pears are another food we dislike simply because of the texture. Sigh.


We tried a new recipe Tuesday night- sweet and sour pork chops. Kid hated them, but Mr. D and I loved them! Definitely adding that recipe to our regulars. And they were only 5 points. We had corn, carrots, and half a serving of Uncle Ben's long grain wild rice.


Zumba was after dinner, and wow. Our instructor just went to the convention a few weeks ago and brought back some new dances. I thought they were awesome, but my knee is a moody bitch and disagreed. It's been a while since I had any serious trouble with my knee, so I was shocked when it was a little painful to walk up the stairs when I got home after class. Fail. It was sore Wednesday, and worse today. I skipped the gym Wednesday to avoid aggravating it, but will try to do something tonight since it's worse. Maybe something stretchy will help?

Since I was lame and didn't post the menu yesterday, I'm cheating and posting Wednesday's grub at the same time :D


Breakfast was coffee with creme brulee creamer, cheerios, and half a cup of skim milk.


Morning snack was a smoothie made with half a banana, peaches, strawberries, 1/2 cup skim milk and some flax seed. Hoping to find spinach that doesn't look icky this weekend so I can start making my green smoothies again. I'm weird about lettuce, but having food poisoning from it once will do that!


Lunch was a salad with tomatoes and Wishbone salad spritzer (it's awesome because it's 1 calorie per spray if you haven't used it before), and a burger loaded with veggies and mustard. I have NO idea where the burgers were catered from, so I had to guess on the points. I used a higher points value to be safe.


Dinner was another new recipe- savory onion chicken. It's the first time we've ever cooked with beer. And, honestly, we weren't impressed. The chicken had no real flavor to it (not worth 6 points), and a few pieces weren't fully cooked, so it all go chunked. Good job, Mr. D! Kidding.. Really can't complain, because at least he cooks AND does so with my healthy cookbooks :) Instead, we had leftover sweet and sour pork chops with green beans, carrots, and uncle ben's long grain wild rice.


I'm not going to put every new recipe on here automatically. Not because I'm mean (thought that may be true), but because we try several new recipes a week most of the time. If there's anything you want to see the recipe for, just let me know and I'll get it posted. Most of them come from the Taste of Home cookbooks. Those are my favorites, because they have pictures. This one's my favorite :)
